A Shot of Delicious: No-flour Chocolate Espresso Cake

Stones Bakery in Falmouth is bringing a little decadence to our weekend, with this simple yet indulgent flourless cake recipe.


Over the past weeks, we’ve been sharing recipes from some of our favourite Cornish cafes but lots of people across the UK are still struggling to find flour. Thankfully, a lack of flour need not mean a lake of cake!

Our friends at Stones Bakery in Falmouth have offered up this rich flourless cake recipe, which is delicious hot or cold and can be made with just five ingredients.

METHOD

Preheat the oven to 200⁰C

Gently melt the butter and chocolate together in a saucepan until just melted, stir in the coffee

Separate the eggs and beat the sugar and yolks together

Stir in the melted chocolate to the egg and sugar

Whip the egg white until stiff peaks form, fold into the chocolate mix

Line a 20cm tin with greaseproof paper and pour in the cake mixture

Bake for around 18 minutes, it should still have a little wobble

Cool and serve immediately ideally with a dollop of crème fraiche!

INGREDIENTS

80g caster sugar
120g good quality unsalted butter
200g dark chocolate
4 free range eggs
1 shot of espresso or 1tsp instant coffee mixed with 1tbsp water
